May 7 May 7 Zucchini+Carrot Fritters Alyssa Bauder in the kitchen, breakfast, snack I have been working at having less waste, so if I see food hitting the end of their shelf-life I am finding ways to use them up! Who doesn’t love finding a way to trick their little ones into eating veggies? When Walker is teething, it seems he becomes pickier so I take the time to try new things! This week I had a Zucchini that was on the verge of going bad, so what a better time to try out some fritters!Ingredients -1 medium zucchini-1 large carrot-2 eggs-1/2 cup flour-1 garlic clove minced-1 teaspoon salt-1 teaspoon pepper-Oil for frying Instructions1. Wash and grate the zucchini. You will need to squeeze the zucchini to remove the extra water into a bowl. Add zucchini to another bowl.2. Grate the carrot.3. Add the carrot, egg, flour, garlic, salt and pepper. Stir well to combine - Please note, you can add parsley and other vegetables such as corn, but this is all I had.4. Grab a large non-stick skillet and put it over medium heat. Add about 2 tablespoons of oil to your pan and heat. Add large overflowing tablespoon of zucchini+carrot mixture and flatten out the tops so fritters are even. Cook until golden brown. If they brown too quickly turn your heat down!5. Serving options - serve with ketchup, yogurt, sour cream or just on their own. Leave a comment
