No Bake Energy Balls

No Bake Energy Balls

Want a simple snack? These No-Bake Energy Balls are perfect and are gone as fast as I make them around here. With Tyler working construction, some days go so fast he does not have time to eat; luckily these are packed full of goodness and great while on the go. The chocolate chips I use are dairy free, but any will do; however, I do recommend going with the mini chips for these just because of the size.

Ingredients 2/3 cup peanut butter
1/2 cup ground flax seeds ( I just use my ninja to ground mine)
1 cup old fashioned oats
1/2 cup semi-sweet chocolate chips (brand I use are Enjoy Life - Allergy Friendly)
2 tablespoons maple syrup (or honey, whichever you prefer)
OPTIONAL: add in nuts, dried berries, hemp seeds, chia seeds
Directions
-
Mix all ingredients together.
-Refrigerate for about 15 minutes to make it easier to form the balls.
-I use a tablespoon to measure out energy balls (this way will make approximately 12).
-OPTIONAL: roll in coconut or chia seeds.
- Put in freezer to harden.
-Move to fridge where they can be stored for up to one week (WE ARE LUCKY IF THEY LAST A DAY).
