Oatmeal Jammies

Okay is it just me or were these cookies always at your grandparents house growing up too? I’ve been missing my grandma through this quarantine and thought why not bake for my family like she always did for all of us? If it wasn’t these cookies, there were ALWAYS some type of baked good to snack on, and I notice this is becoming a thing in my home now as well! I found this recipe on www.savingdessert.com, but I used a different technique for putting the jam in than what you’ll seen on their page.

Ingredients2 cups flour
1 1/2 cups old fashioned oats
1/2 cup sugar
1/4 cup light brown sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
18 tablespoons unsalted butter - melted and slightly cooled
1 teaspoon vanilla extract
Assorted jams (room temp)
Cooking spray
Directions-Preheat oven to 350° F.
-Spray muffin pan with cooking spray and set aside.
-Blend together flour, oats, sugars, baking powder and salt.
-Add butter and vanilla, mix until it becomes clumpy.
-Stir to combine.
-Scoop overflowing tablespoon into each muffin mold.
-Press down to make level, use tablespoon to indent center.
-1 teaspoon of jam in the center of each cookie.
-Bake for 15-18 minutes, until jam is bubbling (I did 18 minutes, but timing will depend on your oven).
-Let cool for about 5 minutes before removing.

Tyler told me he was not a “jam cookie fan”…these were gone in 2 days. I guess he is a fan after all!
